Stella Njagi's Story
The two-week study tour in Halifax, Nova Scotia, was a great opportunity to experience new cultures and ways of life. During the visit, I had an opportunity to explore the Centre for Ocean Venture & Entrepreneurship (COVE), where I gained insight into Nova Scotia’s marine-based economy and saw firsthand how applied research is done. I immersed myself in Nova Scotia's rich culinary scene, visiting Lightfoot & Wolfville Vineyards, where I learned wine tasting techniques. Exploring the Grand-Pré's historic Acadian influences gave me fresh perspectives on linking culture with cuisine.
The most valuable experience was working with NSCC's hotel management faculty at Akerley Campus, where I learned innovative teaching methods for wine education and hospitality training. The hands-on learning and industry connections I gained have already enriched my teaching, as I now work to incorporate tasting workshops and local partnerships into my classes. This experience not only expanded my professional skills but also encouraged me to bring world-class hospitality education to Kenya while celebrating our own local diverse culinary heritage.
