My visit to Canada for the NSCC study tour was a transformative experience that combined academic exposure, cultural exploration, and industry engagement. One of the highlights was the visit to the Halifax Port Authority, where I gained valuable insights into the cruise ship industry. Another unforgettable moment was the culinary demonstration on cooking lobster and beef striploin, where I appreciated the precision and technique. The food and wine pairing session at a winery in Wolfville further deepened my appreciation for the art of gastronomy and wine pairing. At Akerley Campus, we participated in curriculum mapping, an enlightening process that showcased how academic programs are aligned with industry needs. Attending the convocation ceremony at Saint Vincent University was both inspiring and reinforcing the importance of academic achievement and community in student success.
Professionally, this tour has equipped me with new teaching strategies and curriculum planning tools, while personally, it has expanded my cultural understanding and adaptability. This experience will undoubtedly influence my future contributions in the education and hospitality sectors in my country, Kenya.
