My name is Chef Kalingu, and I am a culinary trainer at The Kenya Coast National Polytechnic, Mombasa. Having studied at KS-TVET in Nairobi, Kenya, which borders the Canadian Embassy, I never thought my great admiration for the highly guarded embassy located just across the college hostel would come this soon. I am truly grateful for the incredible opportunity to finally visit Canada and the various Nova Scotia Community College campuses as part of our study tour. The curriculum Mapping session was insightful and provided a clear understanding of how academic programs are structured and aligned to industry needs. Participating in the Atlantic lobster cookery was both fun and educational, allowing me to experience firsthand the culinary techniques that highlight Nova Scotia’s rich seafood heritage. Additionally, cooking the Kenyan Ugali delicacy in Canada gave me a chance to connect with my cultural roots while sharing with others, making the experience even more meaningful.
The tour of the Halifax cruise terminal, Grand Pre historic site, the Lightfoot winery and the vibrant waterfront was equally inspiring. It was fascinating to see the Blend of natural beauty and bustling activity, reflecting the city’s dynamic character. These visits enhanced my appreciation for Halifax’s role as a cultural, tourist and economic hub.
Overall, this study tour was an enriching experience that expanded my hospitality and tourism knowledge, skills and perspective in ways I deeply value.
