Josephine Mutheu's Story
Written by: Josephine Mutheu
My recent trip to Nova Scotia, Canada, was an enriching experience that combined professional development with cultural discovery. I visited key sites, including the Centre for Ocean Ventures and Entrepreneurship, the Grand-Pré National Historic Site, Lightfoot & Wolfville Winery, and NSCC’s Akerley Campus. One of the key highlights was participating in curriculum mapping for Marine Catering and Accommodation, as well as Marine Tourism. This not only deepened my understanding of educational design but also sharpened my planning and communication skills— valuable tools for my future academic and career goals. Among the most exciting moments were the wine tasting at the winery and the wine and food pairing experience at Akerley Campus. It was both educational and enjoyable, offering a deep appreciation for local hospitality and culinary culture
I learned how flavours and local culture come together to create a memorable culinary story. I was surprised by how Nova Scotia’s practices felt both familiar and unique, and the entire experience has helped me grow personally, by becoming more open and culturally aware, and professionally, by gaining insight into how innovation and tradition can work hand in hand.
