Roasted Chickpea Shawarma Pitas

Chickpeas 15 oz can (rinse, drain, & pat dry)
Grape seed or avocado oil 1 Tbsp
NSCC Shawarma Spice Blend 2 ¼ tsp
Salt TT

Garlic Dill Sauce
Tahini ¼ cup
Lemon Juice 2 Tbsp
Garlic, minced 2 cloves
Fresh Dill, chopped 2-3 tsp
Water or unsweetened almond milk 2-3 Tbsp
Sea Salt TT

For Serving
Pita Bread 4
Tomato, sliced 2
Red Onion, sliced 1 medium
Romaine Lettuce or Fresh Parsley as desired


1. Preheat oven to 400 degrees F (204 C) and line a large baking sheet with foil or parchment paper.

2. In a small mixing bowl toss rinsed and dried chickpeas with oil and spice blend; spread on baking sheet. Bake for 25 minutes or until slightly crispy and golden brown. Once slightly cooled, sample and adjust seasonings as desired.

3. While chickpeas are roasting, prepare dill sauce by adding tahini, lemon juice, dill, and garlic to a mixing bowl. Whisk to combine. Add enough water or almond milk to thin so it’s pourable.

4. Taste and adjust seasonings as needed. Add more garlic for zing, salt for savour, lemon juice freshness, and dill for a more intense herb flavor.

5. To serve, warm pita bread and top with desired amount of chickpeas, sauce, and vegetables of choice.

This spice blend can equally be used to season beef, chicken, lamb, or tofu. Enjoy!
